Homemade Chinese style rillettes, sourdough, homegrown greens, homemade mayonnaise, cayenne salt.
These rillettes were extracted from bones used to make a Chinese stock and have the flavours of star anise and cassia as well as ginger and mandarine peel in the mix. Quite a change from the French style but delicious in their own right.(Taken with Instagram)
