  1. Homemade egg and chunky bacon pie. An old fashioned lazy meal using shortcrust dough from Pastry by Patersons and Greenvale Farm bacon.

    I lined my pie tins with the pre-made shortcrust dough, threw in caramelized onion, some skinless roasted red peppers and delicious smoky chunks of bacon, taken from offcuts.

    Next in went fresh free range eggs beaten with Schulz Organic full cream milk. Then more of the goodies. Finally I broke a whole egg onto the top of each one and seasoned with white pepper. They were chilled while my oven heated, then baked for 40 minutes at 180°c.

    I served them with lush homemade tomato relish. On the side, snow peas and purple carrots blanched and rolled in sesame seeds then dressed with sesame oil. No salt was added. It wasn’t needed, such was the provenance of the ingredients.
