  1. Cottage Pie, one of the oldest ways to use up leftovers. I had Warialda Beef cheek, sweetbreads and meat from the bones I used to make phò. So they were warmed through with my seasoned homemade heirloom passata, peas, carrots, fresh basil and onions, topped with Mr Sticki’s mash and then baked until golden on top. It was actually quite light as well as tasty. That sorted, tomorrow I explore the fruits of our big monthly Farmers Market shopping haul.

  2. Soul Food sandwich. My low and slow pulled pork trotters in gelatinously rich BBQ sauce with crisp lemon slaw on sourdough. Leftovers and cheap cuts of meat can be a really, really good thing and these textures and flavours balance well.
